#FoodieExtravaganza: Doughnuts

July has arrived and that means it’s time for another #FoodieExtravaganza! Each month we take turns hosting and selecting a foodie holiday associated with that month. Somehow in all the planning July was overlooked so in a mad dash in the second half of June Lauren of From Gate to Plate told us to celebrate the doughnut. If anyone is keeping score, National Doughnut Day is actually the first Friday in June, but none of us are complaining to be celebrating one of America’s favorite breakfast treats today. July is national culinary arts month so let’s just go with that. Also in July: Fried Chicken Day (today, the 6th), Blueberry Muffin Day (the 11th), and Junk Food Day (the 21st).

I have a soft spot for doughnuts or is it donuts? However you spell it, I’ll eat it. While I prefer a yeast and fried doughnut, I made a cake doughnut. It’s simply easier and less messy. Besides, I need to use my doughnut pan!

I swear, over the past few months my sweet tooth has re-awoken after 6 years of being dormant. I am now searching for that something sweet after dinner, something I get from my dad! That something sweet can be as small as a handful of M&Ms or as decadent as some ice cream. And speaking of that sweet tooth, chocolate is starting to reign supreme, too. Even when my sweet tooth was pretty vocal, I always gravitated towards those sugary, tart sweets over chocolate. I don’t quite know how to handle this new taste preference, I now seem to always have a bag of chocolate covered raisins in the pantry.

Thanks to the chocolate love, I gravitated heavily towards a fancier doughnut than I’d typically do. Chocolate Snickerdoodle Doughnuts. Because. Cinnamon. And chocolate. What could possibly be bad about that?! I did think chocolate chips inside the doughnut and the chocolate ganache on top of the doughnut was just a touch too rich, so I omitted the chips. They weren’t missed. However, not having them in the batter resulted in a lower yield of doughnuts. But for 2.5 of us, one dozen was plenty!

We enjoyed these doughnuts for Father’s Day breakfast. And the father of my children was definitely getting impatient while I finished glazing and photographing the doughnuts. Firecracker’s insistence on regaining possession of his toddler table for his trains didn’t help speed things along. But everyone waited calmly. And the wait was well worth it.

Chocolate Snickerdoodle Doughnuts  Sew You Think You Can Cook

Chocolate Snickerdoodle Doughnuts

Ingredients for doughnuts:

  • 2 C flour
  • 1 C sugar
  • 1/4 C cocoa powder
  • 2 tsp baking powder
  • 1 tsp cream of tarter
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 eggs
  • 1 C buttermilk
  • 3 tbsp melted butter
  • 1 tbsp vanilla extract

Ingredients for toppings:

  • 3 tbsp melted butter
  • 1/2 C sugar
  • 1 tsp cinnamon
  • 1 C semi-sweet chocolate chips
  • 3/4 C heavy cream

Steps:

  1. Preheat oven to 350 degrees F. Grease a doughnut pan.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, cream of tarter, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk together the eggs, buttermilk, butter, and vanilla.
  4. Add the dry ingredients into the wet and mix until combined.
  5. Pour batter into prepared doughnut pan. Bake 10-12 minutes, until a toothpick inserted comes out cleanly. Let doughnuts cool in the pan for 1 minute before transferring to a wire rack to cool.
  6. Make the cinnamon sugar: In a shallow bowl, combine the cinnamon and sugar. Set aside.
  7. Make the ganache: Put chocolate chips and heavy cream in a microwave safe bowl. Microwave in 20 second increments, stirring, until the chocolate is melted. Allow ganache to cool slightly. Set aside.
  8. Brush cooled doughnuts with melted butter. Dip in cinnamon sugar. Top with ganache.

My cookbook library received a well deserved expansion this past Christmas and we excitedly started cooking out of them immediately. One of the books I received was a signed copy of Giada’s Happy Cooking. This cookbook is quite different from her previous cookbooks in both feel and format. Looking through the book makes me feel like I’m going through a beautiful magazine instead of a book book. There’s even a very honest introduction written by Giada.

The first thing we made were the black bean brownies. All I can say is these were… different. To be fair, we changed it up and used a can of refried black beans instead of regular black beans. Stuart took the interesting result to work for others to try our experiment. Successful wouldn’t be the term to describe that baking adventure! Maybe we’ll give them another go and follow her recipe exactly.

Apple Carrot Muffins for #MuffinMonday from Sew You Think You Can Cook (2)

Today’s muffins came from Happy Cooking. I did have to use all AP flour because I was out of wheat flour and omitted the flax meal. As always, I used cinnamon applesauce in place of the unsweeted regular applesauce called for. I also substituted golden raisins in place of dried goji berries. (I wouldn’t recommend shredding baby carrots, but you do what you gotta do!) Even with my changes, these muffins were definitely successful!

This recipe makes one dozen muffins.

Carrot and Apple Muffins

Ingredients:

  • 6 tbsp butter, at room temperature
  • 1 C dark brown sugar
  • 2 eggs
  • 1 1/4 C flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/8 tsp allspice
  • 1/4 C cinnamon applesauce
  • 1/4 C apple juice
  • 1/2 – 2/3 C shredded carrot
  • 1/4 C golden raisins

Steps:

  1. Preheat oven to 350 degrees F. Line a muffin tin with liners.
  2. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and brown sugar until fluffy. Add in the eggs, one at a time.
  3. In a large bowl, whisk together the flour, baking powder, cinnamon, salt, and allspice. Add half of the flour mixture to the stand mixer and mix until combined.
  4. Add the applesauce and apple juice. Mix until incorporated.
  5. Add the remaining flour mixture and mix until combined. Fold in the carrot and raisins.
  6. Divide batter among the prepared muffin tin.
  7. Bake 18 – 20 minutes, or until a toothpick inserted comes out cleanly. Allow muffins to cool in the pan 5 minutes before removing to a cooling rack.

#BundtBakers: Cinnamon

This month’s edition of #BundtBakers is a little different. No, you won’t notice anything unique about this month compared to any of the previous #BundtBakers events but behind the scenes I got to try my hand at hosting again! #BundtBakers is a group of bundt loving bakers who get together once a month to bake bundts with a common ingredient or theme. We take turns hosting each month and choosing the theme or ingredient.

I picked the theme of cinnamon because there’s probably nothing I love more than some cinnamon. In fact, when we had our wonderful Valentine’s dessert my husband mentioned that it’d be great with some nuts and I said, “It could use some cinnamon, too!” to which he simply laughed and said, “You and your cinnamon!” But hey, I can’t help it, it’s just so good! And with 27 other bundt bakers joining me, I know I’m not alone in my love of the spice. Because I am hosting I was more aware of the recipe titles being submitted than I normally am and someone beat me to the punch on using red cinnamon candies in her cake (unfortunately the busyness of work and life prevented her from sharing her cake with us today). There isn’t a rule that says I couldn’t also make a cinnamon candy bundt, but I do like to try to be unique in my flavor profile when I’m aware enough to be so.

Instead I thought about doing a chai bundt, I’ve been wanting to use chai tea in baking, and that thought led me instead use the tea I had in my pantry! It’s “Sweet Cinnamon Spice Tea” and it’s fabulous, no honey required. I followed a recipe for a cake using Earl Grey tea. Instead of blueberries I added chopped walnuts to the cake, you won’t find them in the recipe though because I didn’t think it was the right choice, raisins or chocolate chips might be nice. Also, next time I’ll be steeping two tea bags because there simply wasn’t enough cinnamon flavor for my liking. This recipe followed a unique method for making the cake, too. I’d never make cake batter in a pot before! I divided my batter between my Garland Bundt Pan. The texture of these bundtlettes was quite different, too, it was almost a cross between a baked donut, a muffin, and a cake; perfect for breakfast, warmed, with a little butter. And, of course, compliments your morning cup of coffee or your afternoon cup of tea.

Selfishly, this cake was not shared with anyone outside of our little family. Firecracker helpfully (?) participated in the photography of these cakes and declared them “good” after stealing a bite.

If you don’t have smaller bundt pans feel free to use a large loaf pan or 6 C bundt pan and bake for 55 minutes.

Sweet Cinnamon Spice Tea Bundtlettes (1) for #BundtBakers from Sew You Think You Can Cook

Sweet Cinnamon Spice Tea Bundtletts

Ingredients:

  • 1-2 bags Sweet Cinnamon Spice herbal tea
  • 6 tbsp butter
  • 1/2 C sugar
  • 2 eggs
  • 1/4 C vanilla yogurt (not Greek)
  • 1 1/2 C flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Steps:

  1. Preheat oven to 350 degrees F. Grease six 1 C bundtlettes.
  2. Steep the tea bag in 1/2 C boiling water for 10 minutes. Cut open tea bag and stir the contents into the tea.
  3. In a medium saucepan, melt the butter. Remove from heat and stir in the sugar and eggs until smooth. Add the yogurt and tea.
  4. In a bowl, whisk together the flour, baking powder, baking soda, and salt. Add to the pot and mix until combined.
  5. Divide batter evenly in the prepared bundt pan. Bake 25-30 minutes, until a toothpick inserted comes out cleanly. Allow bundts to cool in the pan before turning out.

#FreshTastyValentines: Apple Salsa

I enjoy making salsas with fruit and have done so using strawberries and pineapple, so when Envy Apples signed up to be a #FreshTastyValentines sponsor I knew exactly how I’d want to highlight their produce; with a little heat and a little sweet.

We love trying new apples. Whenever there’s a variety at the grocery store we’ve not heard of we always pick up a couple to try. In my opinion, the perfect apple is all about texture as sweet vs tart simply depends on my mood. An apple must be both firm and crisp, and the Envy apples are just that; a perfect texture with the bonus of having a flesh resistant to browning, which would make these apples an excellent choice for kids’ lunchboxes or a party cheese plate.

12512546_10103496705705601_8103054962216754607_nWhen I opened up my beautiful box of Envy apples I was pleasantly surprised to be hit with an incredible aroma of fresh apple scent. The intoxicating smell let me know that these apple would have a strong, sweet flavor. I was not disappointed! (P.S. – I had chili on the stove bubbling away making my kitchen smell amazing in itself when I caught a whiff of the sweet apple aroma.) One apple was immediately “sacrificed” when my toddler grabbed it and took a bite, one apple was turned into salsa, and the last happily enjoyed alongside a bacon grilled cheese for lunch.

I pulled together the salsa in about ten minutes, but I probably spent twenty trying to get decent photographs. And then it was time to rush to Pure Barre, but not before first trying a bite of the salsa on a homemade cinnamon sugar tortilla chip. When I returned home from class there was only a bite and a half of the salsa left! My husband had completely devoured it. This recipe is one that I will make again, and I’ll be on constant alert for Envy apples.

Apple Salsa

Ingredients:

  • 1 tbsp butter
  • 1 Envy apple, diced
  • 1 jalapeno, deseeded and minced
  • 1/2 tsp cinnamon
  • 1 tbsp honey
  • 1 tsp lime juice

Steps:

  1. Melt butter in a small skillet over medium heat. Add the apples and jalapenos and saute until tender. Add the cinnamon and cook another 30 seconds. Stir in the honey and lime juice and cook until honey is reduced slightly, about 2 minutes.
  2. Serve with cinnamon sugar tortilla chips (brush whole wheat tortillas with melted butter, sprinkle with cinnamon sugar, and bake at 375degF for 10min).

This recipe makes two servings.

Roshambo

Ingredients:

  • 1/2 C sugar
  • 1/2 C water
  • 1 cinnamon stick
  • 1/2 C apple juice
  • 1/2 C cranberry juice
  • prosecco or champagne

Steps:

  1. Place sugar, water, and cinnamon stick in a small saucepan over medium-low heat until the sugar dissolves. Allow simple syrup to cool completely. Remove cinnamon stick.
  2. In a small pitcher combine 1/4 C cinnamon simply syrup with the juices. Keep cold until ready to serve.
  3. Pour juice mixture into glasses and top with prosecco.

Cinnamon Sour Cream Pancakes

Ingredients:

  • 1 C whole wheat flour
  • 1 C all-purpose flour
  • 4 tbsp sugar
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 2 eggs
  • 8 oz sour cream
  • 1 C milk
  • 1/2 stick butter, melted

Steps:

  1. In a large bowl whisk together the flours, sugar, baking soda, salt, and cinnamon.
  2. In another bowl whisk together the eggs, sour cream, milk, and melted butter.
  3. Add the wet ingredients to the dry.
  4. On a hot buttered griddle drop 1/2 C of batter into pancakes. Flip pancakes when batter starts to set and bubble form in the center of the pancake. Cook until both sides are golden brown.

Cinnamon Roll Pancakes

If a Sunday morning rolls around and I don’t have a roll of cinnamon rolls in the fridge I end up scrounging around the kitchen to find another way to get that fix. I’ve created cinnamon rolls from crescent rolls before, and that’s always a good solution, but I don’t buy crescent dough very often anymore. I’ve done cinnamon roll oatmeal which was fantastic; I should probably do it again and photograph it to generate a blog post.

I’ve seen these cinnamon roll pancakes floating around Pinterest and never thought I’d have the time to whip them up on a Sunday morning before church. Surprisingly, I was wrong! These are actually quite quick to make and so worth it. I did opt out of the cream cheese glaze because I didn’t have cream cheese (shocking!). The photos of these pancakes are pretty sad, so I will absolutely need a re-do.

You can use your favorite pancake recipe or a store bought mix. The magic is in the swirl. If desired, serve with a cream cheese glaze (4 tbsp butter, 2 oz cream cheese, 1 1/4 C powdered sugar, 1 tsp vanilla extract). I didn’t even use syrup.

Cinnamon Roll Pancakes

Ingredients:

  • 1/2 C butter, melted
  • 3/4 C brown sugar
  • 1 tbsp cinnamon
  • 1 C flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 1 C milk
  • 1 tbsp canola oil

Steps:

  1. In a small bowl, whisk together the melted butter, brown sugar, and cinnamon. When slightly cool transfer to a piping bag (or resealable bag) and let rest until thickened.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, beat the egg with the milk and canola oil. Add the wet ingredients to the dry ingredients and mix until combined.
  4. On a hot buttered griddle drop 1/4 C of batter into pancakes. Pipe the cinnamon filling in a swirl (or any shape you want!). Flip pancakes when batter starts to set and bubbles form in the center of the pancake. Cook until both sides are golden brown.
  5. If desired, serve with a cream cheese glaze (4 tbsp butter, 2 oz cream cheese, 1 1/4 C powdered sugar, 1 tsp vanilla extract).

Applesauce Waffles

Another waffle recipe? Yep! Can you believe how many batter recipes there are that get poured into that wonderful checkered iron!? While I’d be content eating regular waffles every week there’s something intriguing about trying something new. Thank you Pinterest for opening my eyes to the wonder that is waffle creativity.

Today’s waffles are made with whole wheat and applesauce, but they still have a lot of butter to make them that much better! And a decent amount of delicious cinnamon.

Applesauce Waffles

Ingredients:

  • 3 1/2 C whole wheat flour
  • 2 tbsp baking powder
  • 1 tbsp cinnamon
  • 3 1/2 C milk
  • 1 stick butter
  • 1/2 C unsweetened applesauce
  • 4 eggs
  • 2 tbsp maple syrup
  • 1 tsp vanilla

Steps:

  1. In a large bowl whisk together flour, baking powder, and cinnamon.
  2. In large microwave safe measuring cup microwave the milk and butter until the butter is melted, about 2-3 minutes.
  3. In another bowl beat the applesauce, eggs, syrup and vanilla. Stir in the warm milk.
  4. Combine wet ingredients into dry.
  5. Into a hot greased waffle iron, drop 1/3 C of batter and cook until golden.

#BundtBakers: Beverages

4ae7b-bundtbakerspostIt’s that time of month for me to share a bundt cake with you alongside #BundtBakers. #BundtBakers is a group of bundt loving bakers who get together once a month to bake bundts with a common ingredient or theme. We take turns hosting each month and choosing the theme or ingredient. This month Laura of Baking in Pyjamas chose Beverages to be our inspiration in baking.

I wracked my brain for this one. I’ve already shared a mimosa bundt and one with Khalua. I wasn’t even convinced I’d fit “bake a bundt” into my busy last-month-before-baby schedule but when I spontaneously purchased Apple Cider a light bulb went off.

This pound cake tastes like Fall. My husband said it reminded him of banana bread and I found the seasonal spices to hint towards a pumpkin treat. It’s a dense cake that lends itself nicely to being thinly sliced, toasted, and topped with apple butter.

I didn’t make a glaze for my cake because I didn’t want it to be too sweet, but if you think it to be “naked” a simple confectioners sugar & milk mixture would be great – especially if you throw some cinnamon and nutmeg in with it – or confections sugar & apple cider. Maybe even some real maple syrup (especially if you toast a slice!) or caramel.

Apple Cider Pound Cake

Ingredients:

  • 3 C apple cider
  • 2 tbsp maple syrup
  • 3 sticks butter, softened
  • 2 C sugar
  • 6 eggs
  • 2 tsp vanilla extract
  • 3 C flour
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp ground allspice
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp salt

Steps:

  1. In a saucepan over medium-high heat, bring apple cider and maple syrup to a boil. Boil, stirring occasionally, 30-40 minutes, or until reduced to 1 C. Remove from heat and set aside.
  2. Preheat oven to 325 degrees F. Grease a bundt pan.
  3. In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and sugar. Add the eggs one at a time and then the vanilla, mixing until combined.
  4. In a large bowl whisk together the flour, baking powder, and spices. Add half of the dry ingredients to the stand mixer and mix until incorporated. Add the apple cider and mix until combined. Add the remaining dry ingredients until incorporated.
  5. Pour batter into prepared bundt pan. Bake 1:15-1:30, or until a cake tester inserted comes out cleanly. Allow cake to cool in the pan before turning out onto a cooling rack.

Apple Pie Waffles

It seems there’s been an influx of apple recipes on the blog lately. But what can I say, that happens when you go apple picking! Do you know how many apples fit in a half bushel!? (And I only kept half of them!)

On the first day of Fall my mom and I took the little man to a local orchard to do some apple picking. We picked some Fuji, Winesap, and Johnathan apples and had a great time doing so. My little guy who only likes apple in sauce form even took some bites of a freshly plucked apple. I guess it’s true what they say, “Allowing kids to be involved in the food encourages them to eat it.” (The same rang true for raspberries we picked at the end of summer.)

Two of those apples, 1 Winesap and 1 Fuji, were shredded and added to waffle batter for some Apple Pie Waffles. With my son being in an “I only eat bread” phase, waffles have become a great way to sneak in some extra nutrition. (Half of a baked sweet potato that he wouldn’t even touch was turned into sweet potato waffles.) These apple pie waffles are packed with apple and Greek yogurt for that extra bit of protein and dairy.

There’s a good chance this is my new favorite waffle recipe! It probably doesn’t hurt that I ate them with vanilla ice cream… only the two I photographed, I promise. Actually, the rest of them were enjoyed solo – no butter, no syrup needed. I tried a little bit with honey and cinnamon sugar and that was quite delightful, but not necessary. My husband still ate them with maple syrup.

Apple Pie Waffles (3) for #MadewithChobani from Sew You Think You Can Cook

Apple Pie Waffles

Ingredients:

  • 2 C flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 3/4 tsp cinnamon
  • 1 tsp ground allspice
  • 1/4 tsp ground nutmeg
  • 3/4 tsp salt
  • 2 eggs
  • 1 1/4 C milk
  • 1/4 C vegetable oil
  • 1/2 C vanilla Greek yogurt (I used Chobani)
  • 1 C shredded peeled apple (1 large or 2 small)

Steps:

  1. In a large bowl whisk together flour, sugar, baking powder, baking soda, spices, and salt.
  2. In another bowl beat eggs with milk, oil, and yogurt.
  3. Combine wet ingredients into dry ingredients. Fold in the shredded apple.
  4. Into a hot greased waffle iron, drop 1/3 C of batter and cook until golden.

Blogger CLUE: Greek Yogurt Apple Loaf

Before you get all wrapped up in the pumpkin craze, let’s not forget about the other great fall fruits, like apples and pears! Yes, pumpkin is technically a fruit, and I have no doubt that some of the CLUE players will be sharing pumpkin recipe. Be sure to stop by their pages, too!

This month I was assigned the blog That Skinny Chick Can Bake written by Liz. Liz helps keep our group organized and is a member of a few other blogging groups I’m also a part of. I’m not sure how she keeps up with everything! Her blog is a beautiful array of sweets (with some great savory options, too).

I was tempted by a couple of her fall salads (Spinach Salad with Pears and Cranberries or Apple Cherry Walnut Salad) but hey, “That Skinny Chick Can Bake” so I settled on a baked item. I altered her Sour Cream Pear Bread to utilize what I had in my fridge – Greek Yogurt and Apples.

Greek Yogurt Apple Loaf

Ingredients:

  • 6 tbsp butter, softened
  • 2/3 C sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 C plain Greek yogurt
  • 1 3/4 C cake flour
  • 3/4 tsp baking powder
  • 3/4 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1 C peeled and diced apples
  • cinnamon sugar, for sprinkling

Steps:

  1. Preheat the oven to 350 degrees F. Grease a loaf pan and sprinkle with cinnamon sugar.
  2. In the bowl of a stand mixer fitted with the paddle attachment, beat together the butter and sugar until combined. Add the eggs one at a time. Mix in the vanilla extract and yogurt (or sour cream).
  3. In a large bowl, whisk together cake flour, baking powder, baking soda, cinnamon, ginger, and a pinch of salt. Add to the stand mixer in 2-3 installments.
  4. Fold in diced apples (or pears). Pour batter into prepared loaf pan.
  5. Bake 40-45 minutes or until a knife inserted comes out cleanly. Allow loaf to cool 15 minutes before removing from pan onto a cooling rack.
  6. This loaf is best served warm/toasted with a little butter.
