Happy Thanksgiving!

This Thanksgiving falls during #CranberryWeek. #CranberryWeek is hosted by Caroline’s Cooking and A Kitchen Hoor’s Adventures. We’ve been sharing cranberry-inspired creations all week long in celebration of national cranberry day. With it being Thanksgiving Day I knew my time was up for sharing specific holiday centered recipes. Hopefully you’re spending your day surrounded by loved ones and don’t have any last minute grocery runs today.

That’s why my cranberry submission involves kitchen staples. Well, fresh cranberries aren’t a year round staple, but for this time of year, I’m going to place my bets. You can put those bags of fresh cranberries in your freezer for year round enjoyment of the tart, red berry. In fact, I’m planning on stocking up on my next grocery trip so I can make this smoothie whenever the mood strikes! I made mine with fresh, not frozen, cranberries. If using frozen cranberries, I’d hold off on adding any ice.

Today’s smoothie is a fantastic way to kick off Turkey Day. It’s a healthy and refreshing beverage that will leave you satisfied yet not worn down.

This recipe will make one smoothie.

An Original Recipe

Cranberry Oat Smoothie

Ingredients:

  • 1 container (6 oz) French vanilla yogurt
  • 1/2 C fresh cranberries
  • 1/2 C ice
  • 1/4 C old fashioned oats
  • 1/4 – 1/2 C milk

Steps:

  1. Place ingredients in a blender and pulse until smooth.

#SundaySupper: Recipes That Use Leftover Halloween Candy

It’s October 30th, the day my Treat turns the big O-N-E! It also happens to be the day before Halloween, which is why our #SundaySupper team has gathered together over 20 recipe ideas for using up all of that leftover Halloween candy. Thank you to T.R. Crumbly of Gluten Free Crumbly for hosting this sweet event.

We have lived in 4 different homes since being married in 2010 and have yet to hand out candy to more than 10 kids on a Halloween. It makes me a little saddened. Growing up our neighborhood was a great trick-or-treating destination and my parents would had out tons of candy! As the years went on people stopped going down the middle streets of the block so my parents would set up shop at the end of the driveway to let trick-or-treaters know there were houses worth stopping for.

Our first home in NWFL was a townhome on the corner across from a gas station – not exactly kid friendly. Our second home in NWFL was in a real neighborhood, but we still didn’t get any trick-or-treaters! I chalked it up to living in the bible belt, the largest church in town always did a trunk-or-treat type of thing.

I had huge hopes when we moved to Ohio. Our long standing neighborhood home was a bus stop. How could we not get trick-or-treaters?! Halloween 1 in Ohio arrived with freezing rain. The handful of children who braved the elements earned more than their fair share of our Halloween candy!

I spent Halloween 2 in Ohio in the hospital with our family’s newest addition, Treat. The grandparents manned the house, handing out candy, and taking Firecracker for his first trick-or-treating.

This year is our first in California and my hopes for trick-or-treaters is close to zero. My friend informed me that one of the main streets shuts down and does trick-or-treating for two hours on Halloween. So, like most families in our area, we’ll be heading that way. I will, of course, leave a bowl out of candy, just in case!

That long “sob story” of Halloweens as an adult means I’ve definitely experienced an over abundance of candy come November. Usually, the candy would make its way to the office.

This year, I bought one bag of KitKats and Reese’s. I wanted candy in the house that I wouldn’t mind eating should I be left with a bunch of it.

Turns out, I picked candy that lends itself nicely to post-Halloween baking, too!

Peanut Butter Cup Coffee Cake | Sew You Think You Can Cook (toddler)

Peanut Butter Cup Coffee Cake

Ingredients:

  • 1 C buttermilk
  • 3/4 C vegetable oil
  • 1 egg
  • 2 1/2 C flour
  • 3/4 C brown sugar
  • 3/4 C sugar
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 tsp nutmeg
  • 1 tsp baking soda
  • 4-5 Reese’s peanut butter cups, chopped

Steps:

  1. Preheat oven to 350 degrees F. Line an 8×8″ cake pan with foil and lightly grease.
  2. Whisk together buttermilk, oil, and egg in a small bowl.
  3. In a large bowl, whisk the flour, sugars, cinnamon, salt, and nutmeg. Remove 1/2 C of the mixture and set aside. Add in the baking soda, and mix to combine.
  4. Combine the wet ingredients into the dry. Pour batter into prepared cake pan. Top with chopped peanut butter cups and reserved flour mixture.
  5. Bake 50-60 minutes, or until a knife inserted comes out cleanly.

#ChoctoberFest: Cocoa Butter Granola

cc-packageI received a bag of White Gold coffee beans and a bag of cocoa butter as part of #Choctoberfest. I’d never worked with cocoa butter before and was quite excited to explore its possibilities. I honestly didn’t even know what to expect! In my mind I was picturing something along the lines of a nut or seed butter (after all, cocoa is a seed). Contrary to my perception, cocoa butter is better used as an oil or dairy butter substitute, with a slightly chocolaty aura. The best part is that it’s a healthy vegan option that doesn’t involve coconut which I’m allergic to!

I decided to make a granola using the cocoa butter, but my head is already reeling with more ways to use the product. I’m dreaming about some rice krispie treat action… Caveman Coffee suggest stirring it into their hot coffee for a mocha inspired beverage.

This granola is addicting and perfect for topping your morning yogurt with some fresh strawberries. It can be used in any way you’d use a sweet granola – in cookies or pancakes and atop ice cream. I tested it out as my morning cereal and while it does work, the min chocolate chips make it a little “odd,” but the oats were fantastic with the addition of cool milk.

My boys quite enjoyed the granola as well. Even my Treat who doesn’t like oatmeal quite enjoyed the sweetened oats when paired with strawberries and vanilla yogurt. However, when given a cup to himself, Firecracker simply picked out the chocolate chips.

Cocoa Butter Granola

Ingredients:

  • 3/4 C cocoa butter
  • 1/2 C brown sugar
  • 2 1/2 C old fashioned oats
  • 1/2 C mini chocolate chips

Steps:

  1. Preheat oven to 300 degrees F.
  2. Place cocoa butter and sugar in a small saucepan over medium heat until melted. Remove from heat and stir in the oats, tossing to coat.
  3. Spread oats onto a rimmed baking sheet and bake 20 minutes, tossing halfway through. Allow oats to cool before tossing with the chocolate chips.

SRC: Breakfast Quinoa

It’s Secret Recipe Club Reveal Day! In the Secret Recipe Club, each participating blogger is assigned a blog from another participating blogger and secretly searches their site for something to recreate. The accompanying blog post then goes live on reveal day! So while I was immersed in my assigned blog, someone else was picking through mine! I’m so excited to be part of this group, to see what on my blog peaks other’s interests and to stumble upon new blogs and new recipes.

I almost didn’t participate this month. My husband has been gone for a month. Not gone gone, just on the other side of the country thanks to a 5 week course for work. We’re in the final stretch and will be reunited Friday! It’s been a long 4.5 weeks so far, but with visits from the boys’ aunt and grandmothers we’ve been making it through.

Cooking has been very minimal around here, limiting my culinary output to things I know the boys will eat. Aka cheese. We’ve been living off of cheese. Grilled cheese sandwiches, quesadillas, nachos, and pizzas – all good means for “hiding” protein into their diets.

I knew signing up for SRC this month would force me to cook something other than waffles and sweets. I’m glad I did, too, because this month I was assigned The Gluten-Free Foodsmith written by Tina Marie. Tina Marie made the switch to gluten-free living after discovering it made a huge impact in restoring her to health following an illness. Tina Marie made the best of her gluten-free lifestyle and has developed an impressive arsenal of delicious recipes that everyone can enjoy!

Limiting my search of her blog to recipes I knew my kids would actually help me eat and that were healthy wasn’t too difficult! Apple Pineapple Muffins were going to be the winner until I found Warm Plum and Blueberry Quinoa Salad. Also added to my possibility list were: Pecan Walnut Chicken Salad (but I haven’t introduced nuts to Treat yet), Black Bean Salsa Wraps, and Lentil Chili Stew.

I had to make some adjustments to Tina Marie’s recipe due to dietary restrictions. I had to substitute agave for honey due to Treat being under one. I used butter instead of coconut oil because I’m allergic to coconut. And used regular cow’s milk instead of almond milk because I haven’t tested a nut allergy with Treat yet and was/am too anxious and nervous about doing so while I’m parenting solo. Obviously, I left the raw almonds out, too. Sounds like a lot, but it’s really not.

We loved this quinoa! I even made it again with strawberries when my mother-in-law was visiting. It was her first introduction to quinoa and she quite enjoyed it, too. What I love best is that it doesn’t take any longer than making oatmeal in the morning and is arguably healthier! Quinoa has almost double the amount of protein as oats do.

Treat loved the change in his breakfast from Greek yogurt to this quinoa. Firecracker, who does enjoy the seed, wasn’t as interested and simply picked out all of the fruit. I guess for him quinoa is supposed to stay savory. I enjoyed the sweet take to it and will continue explore its sweeter applications – I know Tina Maria had a couple cookie recipes on her blog using the seed!

Breakfast Quinoa

Ingredients:

  • 1/2 C uncooked quinoa
  • 2 tbsp butter
  • 1 tbsp agave
  • 1 tbsp milk
  • 1 tsp cinnamon
  • 1 tsp real maple syrup
  • 1 plum, pitted and chopped
  • 1/4 C blueberries (I used frozen)

Steps:

  1. Cook quinoa according to package instructions.
  2. Add butter, agave, milk, cinnamon, and syrup to the cooked quinoa. Stir in the plum and blueberries. Keep over low heat until butter is melted, quinoa is evenly coated, and fruit is warmed through.

#FoodieExtravaganza: Chocolate

It’s the first full week of October that means it’s time for another #FoodieExtravaganza!

Before I get into my schpeal about this wonderful group I have to take a moment and FREAK OUT. It’s OCTOBER. It’s the month that my baby boy turns ONE. How did this happen? You’d think having gone through it once already, I’d be prepared for it this time around. Nope!

Okay, sorry about that.

Within #FoodieExtravaganza, each month we take turns hosting and selecting a foodie holiday associated with that month. This month we’re celebrating anything and everything chocolate. Kathleen of  Fearlessly Creative Mammas is our spectacular host today.

It’s been a while since I’ve shared a recipe from our favorite cookbook Brunch at Bobby’s so why not share these chocolate blintzes we made an embarrassingly long time ago. These crepe-like pancakes are folded around a chocolate ricotta filling. I opted to leave my chocolate chips whole instead of chopping them up and my husband and I had differing opinions on that technique. I enjoyed the bonus crunch that the chips provided, but he thought it made those bites a little too chocolate-forward.

Chocolate Blintzes with Chocolate Ricotta Filling

Ingredients:

  • 1 C ricotta cheese
  • 1 1/2 tbsp powdered sugar
  • 1/3 C + 1 tbsp cocoa powder, divided use
  • 1/4 tsp vanilla extract
  • 1/4 C bittersweet chocolate chips
  • 1/4 C diced strawberries (optional)
  • 2 eggs
  • 1/3 C sugar
  • 2 C milk
  • 3 tbsp butter, melted
  • 1 1/2 C flour
  • 1/2 tsp salt

Steps:

  1. Combine the ricotta, powdered sugar, 1 tbsp cocoa powder, and vanilla until smooth. Fold in the chocolate chips (option to chop them) and strawberries. Cover and refrigerate 1-8 hours.
  2. In a large bowl, whisk the eggs and sugar until pale. Add in the milk and melted butter.
  3. In another bowl, sift together the flour, remaining cocoa powder, and salt. Add to the wet ingredients, stirring until smooth. Cover and refrigerate 2-24 hours.
  4. Pour 1/4 C batter into a small greased skillet. (I used non-stick cooking spray between each pancake) Swirl the pan around to create an even pancake. Once the blintz bubbles in the center, flip and cook another minute. Remove from skillet and fill with 2-3 tbsp of your filling. Fold blintzes like you would an enchilada.

#SundaySupper: Recipes with Coffee

Over Labor Day weekend we traveled to Northern California, Santa Cruz to be exact, to celebrate my cousin’s wedding.

The wedding was one we will never forget. They got married standing underneath exquisite Redwoods with the sun peaking through the massive trees.

To reach the ceremony site, we hopped aboard a narrow gauge train and traveled uphill for about 25 minutes. Following the beautiful exchange of vows we climbed back on the train to return to the reception location. The entire experience was simply breathtaking.

To say my train obsessed toddler was in heaven is an understatement!

We spent the long weekend in Santa Cruz with my parents and uncle at a vacation rental home on the water. We enjoyed exploring the area and discovering the differences between that beach city and the one we’re living in now.

Chocolate Chip Mocha Smoothie for #SundaySupper from Sew You Think You Can Cook (1)Because we staying in a “hotel house,” as we described it to my toddler, I had the luxury of being able to cook! I made Chicken Chorizo Meatballs (a variation of this recipe) for the rehearsal party at my aunt’s “hotel house,” a beautiful cheese platter for dinner one night, and coffee smoothies to accompany some local pastries for breakfast one morning!

I was counting on making my recipe for this week’s Sunday Supper over the wedding weekend so I packed my chocolate chips and chocolate sauce. Doesn’t everyone travel with chocolate chips in tow?!

Thankfully the vacation home had a blender! I hadn’t considered that I may not have one before hitting the grocery store to pick up yogurt and whipped cream.

This smoothie was met with mixed reviews. My dad was not a fan, but sweet coffee drinks are not his thing. My uncle and I enjoyed our glasses, though. That being said, I have some suggestions for changes I’d make next time:

  • The tang from Greek yogurt was a little too much to pair with the coffee, so I’d switch to regular yogurt (or you know, ice cream but then we can’t call it breakfast can we?)
  • To balance out the sweetness level, I’d add a touch of vanilla extract

Chocolate Chip Mocha Smoothie

Ingredients:

  • 1 1/2 C ice
  • 3/4 C vanilla Greek yogurt
  • 3/4 C cooled coffee
  • 1/4 C chocolate chips
  • 1/4 C chocolate syrup

Steps:

  1. Place all ingredients in a blender and blend until smooth. Garnish, if desired, with whipped cream and extra chocolate syrup.

#FoodieExtravaganza: Pancakes

It may be National Waffle Week but this month’s #FoodieExtravaganza is celebrating Pancake Day, which falls on the 26th. Thanks to Caroline of Caroline’s Cooking for stepping up and hosting today!

The Foodie Extravaganza is a monthly party hosted by bloggers who love food! Each month we incorporate one main ingredient or theme into recipes to share with you.

Conveniently, I was already sitting on a pancake recipe to share with you! These Chocolate Chip Peanut Butter Pancakes were a huge hit! I mean, what’s not to love? We’re talking the classic combination of chocolate and peanut butter.

Thanks to the protein-packed pancakes, you don’t need to eat a lot of them to feel full and satisfied. In fact, upon seeing the batter, my husband nervously asked if it would be enough. I assured him that if it weren’t, I could easily whip up another batch. It wasn’t necessary.

I greatly enjoyed these pancakes with a large dollop of whipped cream. (Which Firecracker called ice cream.)

Chocolate Chip Peanut Butter Pancakes

Ingredients:

  • 1 1/8 C flour
  • 2 tbsp sugar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 1/4 C peanut butter
  • 1 C milk
  • 1 tsp vanilla extract
  • 1/4 C chocolate chips

Steps:

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk together the egg, peanut butter, milk, and vanilla.
  3. Combine the wet ingredients into the dry ingredients, mixing until just combined. Fold in the chocolate chips.
  4. On a hot buttered griddle drop 1/2 C of batter into pancakes. Flip pancakes when batter starts to set and bubble form in the center of the pancake. Cook until both sides are golden brown.

#WaffleWeek2016: Buttermilk Cornmeal Waffles with Blackberry Syrup

It’s finally time for Waffle Week of 2016!

I discovered that Waffle Week was a thing last year and am excited that Kaitie of Fuchsia Freezer decided to keep the event going this year.

Not that I really need an excuse to share a waffle recipe with you… ha! In just one year I’ve more than doubled the number of waffle recipes on my blog! I mean, seriously. I don’t think there’s anything better than a waffle. The possibilities with waffle making seem endless, from savory to sweet.

My offering this year can be enjoyed either way. The waffle base lends itself perfectly to being paired with fruit and honey or with meat and gravy. It would even welcome some mix-ins of bacon, scallions, herbs, or berries.

I made these waffles for dinner during a week my husband wasn’t home and it was the perfect amount of batter for the three of us. In all actuality, my 10 month old at 3/4 of a waffle while my 2 year old barely finished a 1/4. Just when I think I know what he’ll eat he decides, “No, I don’t like waffle or pancakes anymore.” (He’s on a sandwich boycott right now too…)

I served these waffles with a blackberry syrup. To make the syrup I simply dumped a bag of frozen blackberries in a small pot with about a tablespoon of sugar and 1/4 C or so of water. I brought it up to a gentle simmer and let it reduce until syrupy then pushed it through a strainer. (You can even save the solids to stir into muffins or more waffles!)

This recipe makes approximately 6 waffles.

Buttermilk Cornmeal Wafles

Ingredients:

  • 1/2 C + 2 tbsp flour
  • 3/8 C cornmeal
  • 1 tbsp baking powder
  • 1 1/2 tsp sugar
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 C buttermilk
  • 2 tbsp vegetable oil
  • 2 eggs, separated

Steps:

  1. In a large bowl, whisk together the flour, cornmeal, baking powder, sugar, baking soda, and salt.
  2. In another bowl, whisk together the buttermilk, oil, and egg yolks. Add to the dry ingredients, mixing until combined.
  3. Place the egg whites in another bowl and beat with a handmixer until stiff peaks form. Gently fold the egg whites into the waffle batter.
  4. Drop 1/3 – 1/2 C of waffle batter onto a greased waffle iron and cook until golden.

#MuffinMonday: Key Lime Pie Muffins (two ways)

I had made muffins with Firecracker on the day of last month’s #MuffinMonday reveal and thought to myself, “Wow, I’m on top of it!” I scooted on over to the Facebook page to submit my recipe title and stopped in my tracks. Turned out August’s reveal lands on my birthday!

Just because it’s #MuffinMonday doesn’t mean I have to stop my streak of Key Lime Pie birthday treats! I shared the traditional version of my favorite dessert on my first birthday while writing Sew You Think You Can Cook. I think I’ll have to make it again this year and vastly improve upon those photos! Last year I transformed the dessert into a bundt cake. (The year in between those I was still getting used to being a brand new mom and shared some adorable baby quilts instead of a recipe.)

I was surprised to find that a search for key lime pie muffins yielded very little and most with coconut. I decided to make my own! I couldn’t decide which route to take and made two versions of Key Lime Pie Muffins.

Version 1 uses key lime flavored Greek yogurt and doesn’t have any added sugar. I substituted some of the flour for crushed graham crackers, and, for good measure, added white chocolate chips. This recipe makes 12 muffins.

Version 2 uses key lime juice and has both white and brown sugars. I again substituted some of the flour for crushed graham crackers and added white chocolate chips. This recipe makes 8-9 muffins.

We enjoyed, and ate, both versions happily. The key lime flavor is much more pronounced in Version 2; it did strengthen after a day or two in Version 1. The graham cracker flavor is more pronounced in Version 1. Both muffins were incredibly moist, but Version 2 gets a little bit of a “crunch” thanks to the sugar. It almost goes without saying that Version 1 is healthier, and a muffin you don’t feel guilty about eating two of in one sitting; it did stick to the liners freshly out of the oven, but come day 2 that wasn’t much of an issue.

Key Lime Yogurt Muffins

Ingredients:

  • 1 C flour
  • 3/4 C crushed graham crackers
  • 2 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 1 container (5.3 oz) key lime Greek yogurt
  • 1/3 C milk
  • 1/4 C vegetable oil
  • 1 lime, zested and juiced
  • 3/4 C white chocolate chips

Steps:

  1. Preheat oven to 350 degrees F. Line a muffin tin with liners.
  2. In a large bowl, whisk together the flour, graham cracker crumbs, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the egg, yogurt, milk, oil, and lime juice and zest.
  4. Add the wet ingredients into the dry and mix until just combined. Fold in the chocolate chips. Divide batter between the 12 muffin cups.
  5. Bake 15 minutes, or until a toothpick inserted comes out cleanly.

Key Lime Pie Muffins

Ingredients:

  • 1 C flour
  • 1/2 C crushed graham crackers
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 1/4 C sugar
  • 1/4 C brown sugar
  • 1/4 C vegetable oil
  • 1/3 C buttermilk
  • 3 tbsp key lime juice
  • zest 1 lime
  • 1/2 C white chocolate chips

Steps:

  1. Preheat oven to 350 degrees F. Line a muffin tin with liners.
  2. In a large bowl, whisk together the flour, graham crackers, baking powder, and salt.
  3. In another bowl, beat together the egg, sugar and brown sugar until smooth. Add in the vegetable oil, buttermilk, key lime juice, and lime zest.
  4. Add the wet ingredients into the dry and mix until just combined. Fold in the chocolate chips. Fill the prepared muffin tins 3/4 of the way. Makes 8-9 muffins.
  5. Bake 18-21 minutes, or until a toothpick inserted comes out cleanly.

Dutch Cream Waffles

No milk? No sugar? Want waffles? No problem!

These waffles can be made with only three, well if you count salt then four, ingredients! Eggs, heavy cream, and flour.

As my mother has pointed out to me on many an occasion, I use a lot of heavy cream in my kitchen, so it’s not uncommon that I’ll have run out of milk before running out of cream and when that happens, these waffles are a life saver. Sorry, Mom, I guess you won’t be making these waffles anytime soon. But, for the rest of you who may use heavy cream in your coffee, or simply have some leftover from another recipe, I highly encourage its use in this breakfast dish!

Four Ingredient Waffles (baby1)  Sew You Think You Can Cook

We’ve made these waffles countless times already, and the photographs shared can attest to how long they’ve been a family favorite; look how little Firecracker is! These photos were taken before Treat was born! 6 days before, to be exact. Back when I thought I knew what wild was. I mean, seriously, he’s actually sitting in a chair and using a fork like a civilized member of society! Now I have two wild and crazy boys who can barely stay in a chair if they’re strapped in and to whom a fork is more a dangerous weapon than a tool used for bring food to one’s mouth.

Four Ingredient Waffles (baby2)  Sew You Think You Can Cook

Dutch Cream Waffles

Ingredients:

  • 3 eggs, separated
  • 1 C heavy cream
  • 1 C flour
  • 1/4 tsp salt

Steps:

  1. Whisk egg yolks until frothy. Add the heavy cream and whisk until combined.
  2. In a large bowl, whisk the flour and salt. Add the wet ingredients to the dry and mix until incorporated.
  3. Place the egg whites in a large bowl and whip with a hand mixer until stiff peaks form. Gently fold the egg whites into the waffle batter until just combined – do not over mix!
  4. Pour 1/3 C of the waffle batter into a greased waffle iron and cook until golden.
