Guys! Hey, guys! Guess what!?

Okay, that’s probably not that difficult a question to answer if you look at the blog post title.

But do you know what the Liebster Award is?! I didn’t. Until I was nominated for it by Valerie! Val is the blogger behind Lifestyle Food Artistry. I assume Val discovered my blog through #SundaySupper. I have enjoyed the Sunday Supper community and now I love it even more!

I am very impressed by Valerie. Valerie had the courage to re-evaluate her life and received professional culinary training. Something that I’d love to do some day. She followed her passion and is now a licensed personal chef!

My favorite thing about blogging is the amount of support I’ve received from fellow bloggers and this award highlights that aspect of this community. The idea behind this award is a “pay it forward” form of acceptance.

  1. When did you decide to start a blog and why?
    1. I always picked something new to make for dinner and decided to document my adventures in the kitchen as a distraction from difficulties conceiving our first child.
  2. What do you hope to accomplish through your blog?
    1. In the land of dream world – to be “discovered” by Food Network! In reality – just to have one person read my blog and enjoy it.
  3. Do you find it helpful to read other blogs for inspiration? If so, do you have a favorite?
    1. Yes! My favorite is Lauren’s Latest. (Must be her name…)
  4. Did you design your blog or did you hire someone to design your site?
    1. Neither? I use one of the free layouts on WordPress.
  5. What is your best dish to make?
    1. My coffee cake – in any flavor (Cranberry, Nutella, Pear, Raspberry)
  6. Have you ever attended a blogger conference or training? If so, which one(s)?
    1. Yes! Food Blog South. (You can see my review of it here.)
  7. Do you use a professional camera for your photography?
    1. I use a Cannon Rebel T5i.

    1. Create a separate email address for all blog related correspondence. It’s not a great piece of advice but organization is key!

11 random facts about me:

  1. I played violin from 4th – 11th grade.
  2. I am a recorded artist; sure it’s a CD my high school created but hey, I’m on an iPod.
  3. I don’t like the color pink.
  4. I play Candy Crush way too much.
  5. I am still waiting for my letter to Hogwarts.
  6. I can eat a large popcorn at the movies… by myself.
  7. I have a very irrational fear of Palmetto roaches.
  8. I kinda secretly wish I could be a Victoria Secret model… but I’m only 4’11″…
  9. I love playing board games and cards; if I’m with family it’s a must-do!
  10. I didn’t experience morning sickness when I was pregnant with my son, and haven’t with this pregnancy either. (Go ahead and hate me.)

#BrunchWeek: Espresso Banana Oat Bread

Welcome to the last day of the third annual #BrunchWeek hosted by Terri of Love and Confections and Shaina of Take a Bite out of Boca. I am ending the week with a perfect recipe to make over the weekend and have to kick start your weekdays. Banana bread.

I never became a coffee addict, even when I was working, however I do enjoy coffee flavor and very rarely indulge in a cup of coffee in the morning (I do require about three heaping spoonfuls of sugar, though). My husband became one of those “I need my morning coffee” people after we got married and entered the “real world” and now enjoys that cup of joe black!

This banana bread recipe is one that my husband has been asking for for quite some time. As you may already know, he has a slight obsession with Bobby Flay and we record his new show on Cooking Channel, Brunch @ Bobby’s. The episode this recipe aired on was titled “Wake Up Brunch” and every dish he made involved coffee. An episode I think most Americans can get behind.

With #BrunchWeek on the horizon I knew that the time had come to finally make this banana bread. I made a mocha whipped cream, using Pacari dark chocolate covered cacao nips, instead of the flavored butter Bobby served with his bread. And instead of chocolate chips, I added in some beautiful  California Walnuts. And, to give the bread some heartiness, I threw in some Bob’s Red Mill Old Fashioned Rolled Oats for good measure.

If you’re looking for that perfect morning pick-me-up, I encourage you to make this bread – it’s not just for brunch!

Espresso Banana Oat Bread

Ingredients:

Steps:

  1. Preheat oven to 350 degrees F. Grease a 9″ loaf pan.
  2. In a small saucepan over medium heat, melt butter until golden (about 2-3 minutes). Stir in the espresso powder and remove from the heat.
  3. In the bowl of a stand mixer, beat banana with the sugars. Beat in the egg until incorporated. Add the melted butter.
  4. In a medium bowl, whisk together the flour, baking soda, and salt. Add to the stand mixer and beat until combined.
  5. Fold in the walnuts and oats. Pour batter into prepared loaf pan. Bake 45-50 minutes, or until a knife inserted comes out cleanly. Allow to cool in pan.

Mocha Whipped Cream

Ingredients:

Steps:

  1. In a small saucepan over medium heat, bring heavy cream and cacao nibs to a simmer. Remove from heat and allow to cool. Place in a glass bowl, cover with plastic wrap, and place in the fridge overnight.
  2. Strain the cold cream and discard the nibs.
  3. Using a hand mixer, beat the cream until thickened. Add the powdered sugar, vanilla, and espresso powder. Beat until firm peaks form.

#FoodieExtravaganza: Burgers

I must take a step aside from #BrunchWeek today because I simply couldn’t pass up this month’s #FoodieExtravaganza! Today’s event is hosted by Stacy at Food Lust People Love. May has some wonderful food holidays that Stacy could have selected, like National Barbecue Month, Salad Month, or Salsa Month; National Enchilada Day, Eat What You Want Day, or Chocolate Chip Day, but she selected arguably my favorite food – the burger. (I say arguably because I’m still undecided if I like pizza or burgers more…)

I rarely make burgers at home, in fact I only have two recipes on my blog – both of which are turkey burgers. It was time to make a beef burger. But as it’s a special occasion (#FoodieExtravaganza day), I went with a “fancy” burger. I say fancy because this burger isn’t topped with lettuce, tomato, and mayo. This baby gets candied jalapenos, bacon, and caramelized pineapple.

Pineapple and Bacon Burgers with Candied Jalapenos

Ingredients:

  • 7/8 C sugar
  • 1/4 C apple cider vinegar
  • 1/2 tsp garlic powder
  • 2 japalenos, sliced
  • 1 lb 80/20 ground beef
  • 1 clove garlic, minced
  • 3-4 tbsp butter
  • 2 – 4 pineapple rings (depending on size)
  • 4 slices center cut bacon, cooked
  • sliced fontinella cheese
  • 4 hamburger buns
  • mayo, for spreading

Steps:

  1. In a small saucepan over medium heat, whisk together the sugar, vinegar, and garlic powder. Bring to a boil for 2 minutes and add the jalapeno slices (cover completely in the liquid). Reduce heat to a simmer and cook 4 minutes. Strain and place the jalapenos in the fridge.
  2.  Using your hands, mix ground beef and garlic with S+P. Form into four patties.
  3. Melt 1-2 tbsp butter in a cast iron skillet over medium-high heat. Cook burgers to desired doneness. Melt cheese over burgers during the last two minutes of cook time.
  4. In a large nonstick skillet, melt remaining butter over medium heat. Cook pineapple rings until golden, 5 minutes per side.
  5. Assemble burgers: spread mayo on hamburger buns, top patties with pineapple, cooked bacon, and candied jalapenos.

To tell you the truth, I’m a little sad to be posting a Thursday Thoughts today. I should be posting with #BundtBakers! The theme this month is Girl Scout Cookies.

My mother-in-law brought us some Girl Scout Cookies when she was here in February so I decided to use the Trefoil as inspiration. The Trefoil is a shortbread cookie – simple, buttery, and perfect with coffee. In looking at the ingredients, the recipe includes buttermilk. I decided to make a buttermilk cake with a coffee glaze and garnish it with some of the Trefoils.

I actually took a risk and decided to break up some of the cookies and put them in the batter. They don’t hold their crunch though, so it’s not a step worth repeating.

I made a very novice mistake – you’d think I’d know by now – after a year of baking bundts! I didn’t let my bundt cool completely and it did not release from the mold. It split right in half! (See the photo on Instagram) If that were all I could have “faked” it together with frosting. Unfortunately the top half broke apart in many pieces, half of it falling on the floor. The floor that I had just vacuumed and mopped! The floor that my son was also crawling on – I’m pretty sure he snuck his first bite of cake before I could pick it all up.

I decided I would turn the cake into a trifle. Layer cookies, cake, strawberries, and a coffee whipped mascarpone cream. Well, I’m sorry to say that that never happened.

Between my husband being very busy at work and the gym, my little man constantly on the move and getting into trouble, our internet being out for an entire weekend (I decided to clean the house instead of bake), and my the little man getting a little cold I simply haven’t had the time! And now it’s #BundtBakers reveal day and I still have a container of cake crumbs on my counter.

I am so behind on everything that tomorrow’s CIC dish still hasn’t been made! Good thing it stays light out really late now…. Even our St. Patrick’s Day dinner didn’t happen until Wednesday.

But hey, just because I didn’t post a bundt today doesn’t mean you can’t check out the fantastic selection of Girl Scout Cookie inspired cakes from the rest of the group.

Pineapple Shrimp Stir Fry

My 2015 New Year’s Resolution of developing a new recipe every month is batting 100 right now. Sure, month 3 has only just begun, but you can’t get a perfect score if you don’t get the first two. (Or as my Grandpa Ray would say whenever we played cards, “You can’t win ’em all if you don’t win the first two.”)

In February my hand was forced. It was Ash Wednesday and there was a lot of snow on the ground preventing trips to the grocery store earlier in the week. I took stock of what I had in my freezer and pantry and decided to work on my original recipe! I did manage to get to both Ash Wednesday Mass and the grocery store so I could pick up some chow mein noodles to give my original stir fry a little somethin’-somethin’.

11008433_10102770035154211_4726077019926716777_nMy mother-in-law was visiting over the long weekend and thanks to the snow storm (I think it was Octavia?) Tilly got an extra 5 days with her grandson. Because of a bitterly windchill of -25 degrees F I took advantage of the situation and left the little man at home where it was warm. I have to say, as crazy as it sounds, I missed him terribly during Mass.

For Valentine’s Day we had Chocolate Kahlua Fondue for dessert and one of the dippers was pineapple (perfect combination). I used the leftover pineapple in my stir fry. I had cooked frozen shrimp in the freezer – I’ll have shrimp cocktail for lunch – which were also used. I would suggest using raw shrimp in stir fries so the shrimp doesn’t get too rubbery but in a pinch, it’s perfect! I wanted to go for the sweet and spicy combination that makes stir fries so popular so I added some Sriracha. To date I’ve always thought that there’s never enough Sriracha in recipes, so I used a full tablespoon. Being heavy-handed with the popular chili paste provided a great warmth to the dish, the perfect amount to slowly build with each bite. The acidity and sweetness from the pineapple combatted the spiciness quite beautifully.

An Original Recipe

Pineapple Shrimp Stir Fry

Ingredients:

  • 1-2 tbsp vegetable oil
  • 1 small red onion, sliced
  • 2 carrots, peeled and cut into sticks
  • 1 clove garlic, minced
  • 1/2″ piece of ginger root, grated
  • 3/4 lb peeled and deveined shrimp
  • 1 tbsp soy sauce
  • 1/2 tsp fish sauce
  • 6 oz chow mein noodles, cooked and rinsed according to package directions
  • 1 tbsp Sriracha
  • 1 scallion, sliced

Steps:

  1. Heat oil in a wok or large skillet over medium high heat. When hot saute the onions and carrots. When the onions soften add in the garlic and ginger and stir fry for 60 seconds.
  2. Add the shrimp and saute until they turn pink and are completely cooked. Add in the pineapple and cook until warmed through.
  3. Add the soy sauce, fish sauce, and Sriracha. Bring to a bubble and toss in the cooked chow mein noodles. Coat noodles in the sauce. Garnish with scallion.

Tuesday Tattles: Teething Edition

At 8 months old my little man has two teeth. Unlike most babies, my son didn’t get these teeth together, the second one arrived about two weeks after the first. I know these teeth mark the beginning of a long process of teething but I have to jinx it and say that as far as a teething baby goes, he’s pretty easy. I had visions, or shall we say nightmares, of what I thought a teething baby would be like. Drooling, runny nose, feverish, with diarrhea, cranky, and inconsolable. So far I’ve only experienced two out of the six. And I would be completely okay with missing out on the other four. We had the crankiness and we had the drooling. Here is a list of things that have gotten us through so far.

Infant’s Tylenol

There is something about this magical elixir that makes everything better. There is an almost instantaneous shift in his mood once he’s tasted the grapey goodness of medicine. I use Tylenol as my last resort, when the crankiness level has reached the state of inconsolable and it’s obvious that he’s in pain. There’s a difference in the tone of his cry and the amount of chewing on whatever he can get his hands on is greater than normal. The teething objects will usually expand to his sleeves in desperation. As with all medicine, consult your doctor before use and only use the prescribed amount.

Bright Starts Chill Out Teethers

These teethers are probably the cheapest variety out there. They even sell a Pretty in Pink version where a portion of the proceeds go to breast cancer research! Pop ’em in the fridge for some soothing cold relief for your little one’s gums.

Nuby Icybite Hard/Soft Teething Keys

Wesley’s newest play date had a set of these teething keys and he went right after them, so I ran out and got him his own set. These are also refrigerator friendly.

This little blanket has it all! A quadrant of it crinkles, the four corners have teething rings, one side has ribbons (although I think they’re too short for my tag-addicted son to take notice), and the center squeaks! A big thank you to my mom for sending this teether.

Vulli Sophie the Giraffe Teether

Sophie teethersSophie is getting another shout on the blog today. The original Sophie is still a favorite, as is teething ring version. The newest member of the Sophie family is the Sophie the Giraffe Squirting Bath Toy. My mother-in-law brought Wesley this toy on her last visit and the little man became very attached to it! It has yet to be played with in the bath, however.

Bright Starts Snuggle & Teethe

This teething toy is known as “Mr. Crinkles” in our house. We have the giraffe (no elephants allowed!) – the two feet each have a different textured teething surface and the animal crinkles. In addition to the elephant they  aalso have a monkey, which is totally cute. I saw it last weekend and almost bought it – but I refrained, as you can see the little guy has a lot of options already!

Lifeproof iPhone case

And now for the favorite chew toy of all – my cell phone. In preparation of having a baby, I converted over to the iPhone just so I could get a Lifeproof case. While I know it’s probably the least hygenic thing my son could ever put in his mouth, he does, and I let him. The corners are just the right fit and as a result my case has teeth scratches all over it.

His other favorite items? Books, magazines, paper (my W-2, for example), the taggie his Tilly made him, Fisher-Price Brilliant Basics Baby’s First Blocks, my hair, his thumb, the tags on anything (pillows, blankets, stuffed animals, etc) and bath toys.

Things have been pretty busy here in the Sew You Think You Can Cook kitchen. I can’t believe my last Thursday Thoughts post was Thanksgiving! I was hoping to talk about today’s concept shortly after the new year but there just wasn’t ever the perfect time. Good thing I don’t really believe in new year’s resolutions. (For the record though, my goal of one original recipe a month is going well. My January concotion, while not a complete fail, wasn’t where I wanted it and a second attempt is happening this week!)

If you are a new year’s resolutions kind of person I hope you’re staying strong. It’s been a month now! The most common resolutions are diet and exercise related. For those of you who already have all of that figured out let me propose a new train of thought. How about an easier way to keep your house clean?

Daily Cleaning Schedule

I started this cleaning schedule in October and to be honest, it worked perfectly for two months. December was a whirlwind of chaos and the chores fell to the bottom of the to do list. I can tell you that following my schedule is the better alternative. By having a daily checklist and by doing one big chore a day I avoid a full day of constant cleaning before visitors arrive. If we have company for dinner all I need to do is check that the bathroom is stocked with toilet paper and the sink wiped down. If family is coming to stay all I need to do is put clean sheets on the bed and pull out clean towels for their use. I promise you, this schedule works.

I adopted this cleaning philosphy because being a busy mom of an infant means that the house can become a disaster pretty quickly. And because I’m no longer going off to work that means I have to look at the mess during the day! I am honest with myself and know that some days I might not get around to that big chore and that’s okay. If I have to skip a day I try to add it to the next day’s agenda (that’s the beauty of only one big chore a day) or make an extra effort not to skip it the following week.

Tuesday Tattles

Today my little man is seven months old. SEVEN! That’s more than half a year!

Last month I shared our first flying experience so the items shared today span two months worth of life. There’s a lot that’s happened in these two months. My son experienced his first cold, his first airplane ride, his first time in a pool, his first foods, and his first tooth!

4moms Rockaroo

My mom’s cousins gave us the Rockaroo back in August. While I know of many kids who enjoyed this rocker right away my son was not one of them. It wasn’t until month 4 that he started to like being in the Rockaroo. 4moms RockarooI think he was simply too little and the Rockaroo rocked too fast, but now that he has some weight to him it doesn’t rock too quickly and is now even turned up to speed 3 (of 5). There’s an arm above the seat with removable “balls”. These “balls” once seemed like a distant dream to my son but now he can grab them, pull them off the holder, and stuff them in his mouth (because what else!?). In his teething state he tried to eat the plastic holder – and succeeded. And last week he managed to yank the holder off the arm – I’m still trying to figure out how to reattach it! I’m telling you, he’s getting too big and too strong!!

Ingenuity Baby Base 2-in-1 Booster Seat

booster seatAt my son’s 4 month doctor appointment it was recommended he start sitting upright – supported in a Bumbo-type seat. My mother-in-law’s quilting friends gifted us with this booster seat at our baby shower. I love that it has a tray and we use this for meal time. Our house is small and our dining table has been put in storage to have room for the little man to play. We don’t really have room for a real highchair so this booster seat is a perfect alternative.

Fisher-Price Space Saver Jumperoo

jumparooThe bouncer was the “life saver” baby containment gadget back in month 3 and now that my son is older the jumperoo is the must-have item! He has always loved bouncing – whether in my arms or on my lap. As soon as he could “stand” he’d bounce. Some sort of jumperoo was a mandatory item according to my in-laws. We don’t have any doorframes that would work for the classic jumper that was my husband’s must-have item when he was a baby. When I saw this jumperoo I knew I had to have it. Not only did the woodland friends fit perfectly with my son’s bedroom theme but this version was a “space saver.” Compared to other jumperoos I’ve seen this one is small. But it’s also the reason we don’t have a dining table right now. This jumparoo plays music and sound effects with lights whenever my son bounces, it has dangling toys for him to bat at, and even a teething friendly toy that he just loves.

The World of Eric Carle Toy

Eric Carle wrote the very famous The Very Hungry Caterpillar children’s book. There are now developmental toys that accompany his books. A coworker gave us the Mr. Seahorse toy and we just love it! We bought the board book to go with it. My son enjoys the toy so much that for Christmas I got him the firefly toy and book. The pack-rat OCD side of me now wants each toy and book combination!

The Day the Crayons Quit

And speaking of books, The Day the Crayons Quit by Drew Daywalt is my husband’s favorite! It’s a very fun and clever way to teach children about colors. The different colors write letters to their child explaining their feelings. Whether they’re angry at being “overworked” or “under utilized” or happy to be the favorite color, they’re describing what animals or objects are what color. I urge you to buy this book for your child’s collection.

Baby Einstein Discover and Play Piano

It’s crazy to think that my little man is old enough to have a favorite toy. Maybe what’s crazy is that I can understand what that toy is! This Baby Einstein piano is that toy. My son loves to bang on it and make it light up and play music. Baby Einstein pianoIt’s this toy that is getting him close to being able to crawl – as he plays with it and it gets out of his reach he figures out ways to get it back. And the best part might be that it plays more than one song. With three settings and three different instruments to select there’s a wide range of music and noises that play from this toy. Sure, I know them all and hear them in my dreams, but at least it’s not only one melody. Variety in sounds is important for parents to keep their sanity.
