#HotSummerEats: Asian Sesame Pasta Salad

HotSummerEatsEven though grilling is quintessential to summer eating, I find that pasta salads are equally synonymous with summer gatherings. Whether it’s a barbecue, a picnic, or a potluck, there’s always a pasta salad handy to round out your plate. A lot of people try to avoid mayonnaise based pasta salads when the weather is warm and turn instead to lighter versions using vinaigrettes and salad dressings.

b8882-tlishT.Lish provided participating bloggers with their three flavors of vinaigrettes: Asian Sesame, Chipotle, and Sweet Garlic. As you can tell from the blog post title, I used the first flavor for a pasta salad. The Chipotle was a fan favorite when we had friends over for wings (and I served up some Garlic Hot Wings along with a couple other flavors). The Sweet Garlic is my personal favorite and have tossed it on haricot vert for a simple side dish.

There are many veggie add-ins that would work with the Asian Sesame vinaigrette. I was really hoping to add baby corn to my salad but my grocery store didn’t have any. Broccoli, snap peas, cucumber, and carrot would also work. You could even turn this pasta salad into an entree by adding some cocktail shrimp!

An Original Recipe

Asian Sesame Pasta Salad

Ingredients:

  • 2 C uncooked rotini pasta
  • 3/4 C frozen shelled edamame, thawed
  • 1/3 C diced red bell pepper
  • segments from 1 1/2 – 2 mandarin oranges
  • 1/2 C Asian Sesame Vinaigrette
  • juice 1/2 – 1 mandarin orange

Steps:

  1. Cook pasta in boiling salted water until al dente.
  2. In a bowl, toss together veggies, mandarins, and cooked pasta.
  3. In a small bowl, whisk together vinaigrette and mandarin orange juice. Season to taste with S+P. Add to pasta salad and toss to combine. Keep cold until ready to serve.

#HotSummerEats: Cherry Chipotle Baked Beans

HotSummerEatsWe’ve just crossed the halfway point of #HotSummerEats hosted by Camilla of Culinary Adventures with Camilla. My menu continues with my husband’s favorite recipe of not only the week but of any that I’ve created to date.

I was happy to see that Not Ketchup was sponsoring this event. 64b31-not2bketchupThey generously provided bottles of their dipping sauce during last year’s #10DaysofTailgate during which I made Maize and Blue Chicken Salad. This time I requested a bottle of their Cherry Chipotle dipping sauce with the plan to make baked beans.

I had so much fun creating my Whiskey Bacon Baked Beans that I knew I wanted to try making more flavors. During that first batch of beans I realized just how much 1 lb of beans really is so I decreased the amount but feel free to double my recipe if you’re feeding a crowd. I actually made these beans twice – each time bringing them to a small potluck, and each time getting compliments. I kept this recipe vegetarian for some of my guests but feel free to substitute chicken stock or even add bacon!

An Original Recipe

Cherry Chipotle Baked Beans

Ingredients:

  • 1 C dry great northern beans (soaked and drained according to package directions)
  • 1/2 red bell pepper, diced
  • 1 Vidalia onion, diced
  • 1/4 C Cherry Chipotle Not Ketchup
  • 2 tbsp molasses
  • 1 tsp Kosher salt
  • 1/2 tsp ground mustard
  • 1/4 tsp black pepper
  • pinch cayenne (optional and to taste)
  • 1 1/2 C vegetable broth

Steps:

  1. Place all ingredients in slow cooker. Stir. Cook on LOW 6 – 7 hours until beans are tender and sauce thickened.

#HotSummerEats: Mexican Corn Salad

HotSummerEatsToday is the first day of #HotSummerEats, a blogging event headed up by Camilla of Culinary Adventures with Camilla. To kick off the week I went in a Mexican direction – it is Mexican Monday after all!

My favorite thing about summer produce is the fresh corn on the cob. I pretty much only make it one way but have always been intrigued by the Mexican Corn on the Cob you see from street vendors. But I imagine it to be super messy. Lately I’ve been seeing a lot of plays on this favorite snack by taking the corn off the cob and turning it into a side dish. I jumped on the bandwagon and I’m so glad I did! We loved this corn salad and used in on tostadas and in tacos.

caribeque logoTo add a little punch of flavor to the salad I used the spice blend Island Thyme from Caribeque. To say we like this blend would be a big understatement. Twice now I have sprinkled it on pork chops for a quick weeknight dinner, even serving it to guests who enjoyed it as much as we did. I’ve even used it compensate for taco seasoning when I’d used up the last of my supply and needed a couple tablespoons more. My little man liked the corn salad (he picked out the corn and wouldn’t touch the Feta) and he’s gobbled up the pork seasoned with Island Thyme, too!

Mexican Corn Salad

Ingredients:

Steps:

  1. Heat olive oil in a cast iron skillet over medium-high heat. Add the thawed corn and allow corn to char about 5 minutes – don’t stir too often but don’t let the corn burn.
  2. In a bowl whisk together the mayo, cilantro paste, garlic paste, lime juice, and Island Thyme seasoning.
  3. Add the corn, onion, and jalapeno. Mix until combined. Gently fold in the Feta.

#BrunchWeek: Pear Coffee Cake and Fruit & Cheese Salad

Welcome back to the third annual #BrunchWeek hosted by Terri of Love and Confections and Shaina of Take a Bite out of Boca.

woot frootI couldn’t celebrate a week of brunch without another variation of my very popular coffee cake and when Woot Froot was announced as a #BrunchWeek sponsor I knew I’d utilize the fruit they sent. Because peaches and nectarines (what they’re most famous for) aren’t in season until next month, we received sliced pears and destemmed grapes. I decided to use the pears in my coffee cake! After many bundt baking attempts at putting foods in cakes I tossed the chopped pears in flour (and cinnamon for good measure).

I have made this coffee cake so many times and have done so using either sour cream or yogurt – we’ve even used lemon Greek yogurt once in a pinch! I saw another opportunity to use a sponsored product – Stonyfield Organic yogurt! (I buy their YoBaby yogurts for the little man, and it’s definitely his favorite food.) I used whole milk vanilla yogurt in this coffee cake and it’s absolutely delicious, a great accompaniment to the pears!

I like to top my coffee cakes with a crumble that includes oats. Conveniently enough Bob’s Red Mill provided participating bloggers with a bag of old fashioned rolled oats!

cabotNot only am I sharing my coffee cake recipe today – I’m using Cabot Cheese White Oak Cheddar in a fruit salad! The way I figured it, people often eat fruit with their cheese plate so why not combine it in a sweet and savory dressing.

Pear Coffee Cake

Ingredients for topping:

  • 3/8 C flour
  • 1/3 C Dixie Crystals Brown Sugar
  • 1/2 tsp cinnamon
  • pinch of salt
  • 2 1/2 tbsp butter, at room temperature
  • 1/4 C rolled oats

Ingredients for cake:

  • 2 C + 1 tbsp flour, divided use
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 stick butter, at room temperature
  • 1 C Dixie Crystals Granulated Sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 C whole milk vanilla yogurt
  • 1 C peeled and diced pears
  • 1/2 tsp cinnamon

Steps:

  1. Make the topping: whisk together the flour, sugar, cinnamon, and salt. Using your fingers, break the butter into small pieces and combine with the topping. After combined add the oats. Set aside.
  2. Preheat oven to 350 degrees F. Line an 8×8″ square cake pan with foil and grease.
  3. Make the cake: In a large bowl whisk together 2 C flour, baking powder, baking soda, and salt.
  4. In a the bowl of a stand mixer beat butter and sugar until fluffy. Add eggs one at a time. Add in the vanilla.
  5. Incorporate a third of the dry ingredients into the wet ingredients. Once combined add 1/2 C of yogurt. Add another third of the dry ingredients. Once combined add the last 1/2 C of yogurt. Add in the final third of the dry ingredients.
  6. Toss pears in remaining flour and cinnamon.
  7. Assemble the cake: Place half of the cake batter in the prepared cake pan. Evenly distribute the pears and top with remaining batter. Top the cake with the topping from step 1.
  8. Bake for 65 minutes, or until a knife comes out cleanly.
  9. Allow cake to cool for 5 minutes and remove the cake from the pan by the foil. Serve your cake with fruit & cheese salad (recipe below)!

Fruit & Cheese Salad

Ingredients:

  • 3 C chopped pears
  • 2 C sliced red grapes
  • 1 Fuji apple, diced
  • 6 oz White Oak Cheddar Cheese, cubed
  • 1/4 C apple cider vinegar
  • 1/4 C extra virgin olive oil
  • 1/4 C agave nectar
  • 1 1/2 tsp vanilla extract
  • 2 tbsp fresh basil, chiffonade

Steps:

  1. In a large bowl, toss together fruit and cheese.
  2. In a small bowl, whisk together vinegar, olive oil, agave, and vanilla. Season to taste with salt.
  3. Dress fruit salad with the dressing and add in the basil. Keep cold.

#BrunchWeek: Papas con Chorizo

Happy Cinco de Mayo everybody! And happy day two of the third annual #BrunchWeek hosted by Terri of Love and Confections and Shaina of Take a Bite out of Boca!

I’ve been meaning to venture into the breakfast world of Mexican cuisine, but always manage to forget about it. Until today! Thanks to Cinco de Mayo falling during this year’s #BrunchWeek I finally had my opportunity.

Today I bring you the simplest dish, perfect to accompany any brunch menu. Potatoes are always a perfect side at breakfast, so why not trade in those classic hash-browns for papas con chorizo! Potatoes, chorizo, and cheese. You can’t possibly go wrong! If you want to turn this dish into a main course you could add some scrambled eggs and serve breakfast burrito style.

The materials used in creating this spatula are of great quality and don’t scratch the surface of skillets and dishes. It’s a very sturdy product and can stand up to flipping a wide variety of foods and the angle of the handle makes using it very easy and comfortable; I not only used it for mixing and serving these potatoes but also flipped burgers without any trouble. The slotted turner could also withstand the pressure I put on it to break up the chorizo as it cooked in the skillet.

Papas con Chorizo

Ingredients:

  • 1 lb gold potatoes, peeled and diced
  • 3 links Mexican chorizo, casings removed
  • 1 C shredded Mexican blend cheese

Steps:

  1. Preheat oven to 350 degrees F.
  2. Place potatoes in a saucepan and cover with water. Bring to a boil, reduce heat, and cook until almost fork tender.
  3. In a cast iron skillet (or oven-safe skillet), brown chorizo over medium-high heat, breaking up. Cook completely.
  4. Drain potatoes and add to the skillet with the chorizo. Toss, gently, to combine. Cover with cheese and put in the oven for 7-10 minutes until cheese is melted and potatoes are fully cooked.

Carrot Risotto

If you’ve been following me on Instagram you might have noticed a lot of “sneak peak” photographs utilizing some sponsored item. All of those goodies will be shared for #BrunchWeek which starts next Monday. I am so excited!

One of our generous sponsors is Grimmway Farms/Cal-Organic/True Juice Family. A beautiful box of fresh organic produce and juices arrived on my doorstep. The kale and radishes will be utilized next week. The baby carrots have been a perfect healthy afternoon snack – reminding me how much I enjoy carrots! Cal-Organic also sent a bag of Colorshred carrots. The beautiful bag of carrot confetti was used to create a colorful spring time risotto.

We grilled up some chicken to serve alongside this side dish. As a side dish, the recipe below will serve four people. My little man really enjoyed this risotto and even had some of the leftovers for lunch the next day. Look who’s coming around to carrots after all!

Carrot Risotto

Ingredients:

  • 1 tbsp olive oil, divided use
  • 1 tbsp butter, divided use
  • 1 1/2 C shredded carrots
  • 1/2 tsp sugar
  • 1/4 red onion, diced
  • 1 C arborio rice
  • 1/4 C white wine
  • 3 – 4 C chicken or vegetable broth
  • 2 tbsp ricotta cheese
  • 2 tbsp shredded Parmesan cheese
  • 1 1/2 tsp parsley

Steps:

  1. In a dutch oven over medium-high heat melt half of the butter and half of the oil. Add the shredded carrots with 1/4 C water, salt, and the sugar. Cover and cook for five minutes. Uncover and allow to cook until the liquid is evaporated. Remove from pot and set aside.
  2. Bring stock to a simmer in a saucepan over medium heat.
  3. In the dutch oven melt the remaining butter and oil. Add the onions and cook until translucent. Add the arborio rice, stir to coat, and cook about one minute. Deglaze with white wine.
  4. Once the wine is absorbed add the warm stock a ladleful at a time, stirring, waiting for liquid to be absorbed before adding more. Continue cooking this way until the rice is creamy and tender, about 20 minutes.
  5. Stir in the carrots, ricotta, Parmesan, and parsley. Season to taste with S+P. If needed, thin the risotto with additional stock.

#SundaySupper: Picnic

Picnics. Now there’s a word that means something different to everyone. You might not have thought that before, but think about it.

Do you think of a romantic meal for two on a blanket in a meadow? Maybe sandwiches on the beach? A backpack meal on a hike?

For me, picnic is almost synonymous with family reunion.

Every year my dad’s family has a huge reunion in July. My grandparents came to America from the Dominican Republic along with many cousins from their generation. We rent out a park space and everyone comes together. Much of the family is still in the Chicago area so that’s where we all convene. Growing up we would always travel back to spend the Fourth of July at my mom’s parents lake house in Lake Geneva, WI and spend time with my dad’s parents in Illinois, ending our vacation with the family picnic.

Everyone is assigned a category of food to bring based on last name. Except for my aunt – she’s required to bring her 7 layer dip. And my mom used to be “the candy lady” – she’d buy huge bags of candy (and those giant pixie sticks) and all the kids would love her for it. All the kids are grown up now so she still brings a little something but it’s definitely not to the scale she did when we were younger.

It’s a wonderful gathering of family and I hope to make it this year! Now that I’m an E last name I think I’m supposed to bring veggies instead of salad. Maybe I’ll find some great ideas from the rest of my Sunday Supper family.

When I think picnic food I think hotdogs and macaroni salad. Stuart doesn’t like macaroni salad so I thought I’d try something new to tempt him. We were having people over for grilling and this spicy version was a huge hit! I used veggies typically served with buffalo wings – celery and carrots – and added tomato to cool it down a bit. Be warned: this macaroni salad gets spicier the longer it sits!

Buffalo Macaroni Salad

Ingredients:

  • 1 C uncooked macaroni noodles
  • 1/4 C finely diced red onion
  • 1/4 C finely diced celery
  • 1/2 C finely diced carrot
  • 3/4 C diced tomato
  • 3/4 C mayonnaise
  • 1/4 C buffalo sauce
  • 1/4 C red wine vinegar
  • 1 1/2 tsp minced garlic
  • 1/2 tsp chili powder

Steps:

  1. Cook macaroni in boiling salted water according to package directions.
  2. In a small bowl whisk together the mayo, buffalo sauce, vinegar, garlic, and chili powder.
  3. In a large bowl toss cooked pasta with the veggies.
  4. Coat pasta salad in as much dressing as desired. (I only used about half of the sauce)

#SundaySupper: Beantastic

Today’s #SundaySupper is celebrating the bean. Any type of bean is fair game. When you stop and think about it, that’s a very broad assignment. Which doesn’t make narrowing down a recipe to make very easy. There are the beans that first come to mind – those beans in a can (or dry): black beans, pinto beans, kidney beans, etc. There are the beans in the produce aisle: green beans, pole beans, lima beans, etc. Then there’s the beans you don’t think of as beans – those on the sweet side of life: cacao, coffee, and vanilla. And don’t forget about the soy bean!

Making baked beans from scratch has been a culinary bucket list item for me. My recipe though isn’t a technical baked bean because I tackle the job with the help of my trusty slow cooker! I did my research and created a Lauren Everson original recipe. And this one isn’t even my New Year’s Resolution recipe! I’ll be sharing that for Stir Fry Day Friday this week.

Back to the beans. There’s been a bottle of whiskey sitting in our liquor cabinet for quite some time. I don’t even know where it came from. I almost donated it to my brother-in-law when we moved, but I held on to it, thinking it could come in handy. The day had finally arrived. I decided to use it in my baked beans! Whiskey and bacon. I knew I had a winner there.

I loaded up my slow cooker and crossed my fingers that my flavors would meld nicely and my beans would cook properly. This adventure was the first time I’d purchased dried beans! Question: what does it mean when “they” say to “sort” the beans? My intuition tells me it means finding the “bad” beans and tossing them – but how do you know if it’s a “bad bean?”

When I dumped all of the ingredients into the slow cooker I was over powered by the smell of the whiskey. I figured I’d give it half of the cook time before deciding if I needed to mellow it down with more sugar. I tasted my sauce throughout the day and was excitedly happy with how perfect things were coming along. These baked beans are easy to make and have much more flavor than a can of baked beans. Bring a pot of these to your next picnic or potluck and you’ll be everyone’s favorite person. Did I mention whiskey and bacon?

An Original Recipe

Whiskey Bacon Baked Beans

Ingredients:

  • 1 lb dry navy beans
  • 1 onion, chopped
  • 4 strips center cut bacon, chopped
  • 1/4 C molasses
  • 1/2 C dark brown sugar
  • 1/4 C ketchup
  • 2 tbsp spicy mustard (I used El Diablo Texas Chili)
  • 1 C whiskey
  • 2 C water
  • 1/2 tsp black pepper
  • 1 1/2 tsp Kosher salt

Steps:

  1. Rinse, drain, and sort beans. Soak them in 2 qt water (or according to package directions) over night.
  2. Put beans and remaining ingredients in to a slow cooker.
  3. Cook on LOW 10 hours, or until beans are tender and sauce has thickened.

Caesar Tart

Sometimes salads can be boring. Even your favorite salad can end up leaving you wanting more. I challenge you to “fancify” your next salad by placing it atop a tart!

My favorite salad is Caesar and the tart it’s been placed upon is roasted garlic. When I found this recipe 8 months ago I’d been searching for the perfect time to make it. For a side dish it seemed like quite a lot of work. So when we were invited to our neighbor’s home for dinner I was provided my opportunity! Without the added responsibility of creating an entree I could spend my time on this fancy salad.

Turns out you can make this side dish in stages! My excuse for not having made it sooner was simply made invalid. You can make the dressing in advance. You can make the tart shell in advance. You can even shave or shred your Parmesan ahead of time. I waited to dress the salad until we were ready to eat, gently placed it on top of the tart shell, and topped it with Parmesan. Note: there aren’t any croutons in this salad – the tart shell acts as your croutons, but if you simply can’t live without them, feel free to add them to your salad too.

If you want to make this more of a main dish feel free to top your tart with some grilled chicken or salmon.

Caesar Tart

Ingredients for the Roasted Garlic Tart:

  • 1 head of garlic
  • 1 tbsp olive oil
  • 1 stick butter, at room temperature
  • 1/4 C grated Paremsan cheese
  • 1/4 tsp salt
  • 1 1/4 C flour

Ingredients for the Caesar Dressing:

  • 3 cloves garlic, minced
  • 6 anchovies
  • 4 tsp red wine vinegar
  • juice of 1 lemon
  • 1/4 tsp salt
  • 1/4 C extra virgin olive oil
  • 1/2 tsp sugar

Ingredients for the salad:

  • 3 hearts of romaine, chopped
  • 1/4 C grated Parmesan cheese

Steps:

  1. Preheat oven to 350 degrees F.
  2. Cut off the top of the head of garlic, so the bulbs are exposed but still in tact. Pour the olive oil overtop the garlic. Wrap in aluminum foil. Bake 40 minutes. Allow to cool.
  3. When garlic is cool, squeeze the cloves into the bowl of a stand mixer. Add the butter, Parmesan, and salt. Beat the mixture until combined. Add in the flour and mix until crumbly.
  4. Press the dough into a greased tart pan (I don’t have one and used a foil lined pie dish). Bake 20-25 minutes, or until golden. Allow tart to cool.
  5. Make the dressing: Place all of the ingredients in a small food processor or blender. Pulse until combined. Taste to check for additional salt or sugar (will depend on how juicy the lemon is).
  6. In a large bowl toss the lettuce and Parmesan with as much dressing as desired. Top the tart with the dressed salad.

Pineapple Fried Rice

The next time you make rice as a side dish to your dinner, I encourage you to make extra. 3 C worth of extra rice to be exact. Or just make this dish from scratch, just plan for extra time to cook the rice. For 3 cups of cooked rice, you’ll need approximately 1 cup of uncooked rice (and two cups of liquid).

Today’s Stir Fry Day Friday is a perfect side dish to accompany fish or chicken. I served it alongside my Brown Sugar Honey Mustard Glazed Salmon.

This fried rice isn’t your typical Chinese take out or Hibachi staple. This rice gets a kick from the ginger and a tropical sweetness from the fresh pineapple.

Pineapple Fried Rice

Ingredients:

  • 2 tbsp canola oil
  • 1 1/2 tsp grated ginger
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 3 scallions, chopped
  • 1 carrot, diced
  • 1/2 bell pepper, diced
  • 1/4 C peas
  • 1 1/4 C pineapple, cubed
  • 3 C cooked rice
  • 2 1/2 tbsp soy sauce
  • 1/2 tsp white pepper

Steps:

  1. In a wok or large skillet heat oil over medium-high heat. Stir fry the ginger and garlic until fragrant, 30 seconds. Add in the onions and white parts of the scallions. Cook until tender.
  2. Add the carrots, bell pepper, and peas. Cook for 2 minutes. Add the pineapple and cook another minute. Add the rice, soy sauce, and white pepper. Reduce heat to medium and cook two minutes. Add additional salt if desired. Garnish with green parts of the scallions.
